What's For Dinner Wednesday

I'm keeping it short and sweet tonight. First of all, THANK YOU to those of you who shared their dinner menu last Wednesday. I was inspired by Ellen's tofu and Erin's stroganoff and made Tofu Mushroom Stroganoff over brown rice, with sourdough bread and carrot spread for tonight's dinner. Sounds pretty tasty, no? Unfortunately, it was...eh. Definitely edible, there was (thankfully) no gagging toddler at the table tonight, but it was definitely not make-again-good. And not a recipe worthy of sharing. Sorry. :)
I will, however, come through with a good recipe later this week. Stay tuned. ;)

  1. We had leftovers. Left over Tuscan Ribollita
    , with turkey sandwiches on days-old bagels with a herb salad & homemade honey/mustard vinaigrette.

  2. We had chicken marinated in Italian Dressing and then pan seared. On the side, I made salad with parmesan cheese and garlic lemon dressing (homemade, very garlicky, very yummy!) and porcini mushroom risotto - actually came from a box but a great brand of organics that you can get at hannaford.

  3. we had a mixture of romano beans, carrots, onions, red peppers, snow peas, and bean sprouts, sauteed with sweet and sour sauce, over quinoa.
