I'll try the soup next! -Jen LAnonymousnoreply@blogger.comtag:blogger.com,1999:blog-1382855382470229755.post-33397330669413190232010-07-14T20:34:44.524-04:002010-07-14T20:34:44.524-04:00Dont forget the Trembler family favorite of Tzatzi...Dont forget the Trembler family favorite of Tzatziki! <br /><br />Prep Time: 20 minutes<br />Total Time: 20 minutes<br />Ingredients:<br /><br />* 3 tbsp. olive oil<br />* 1 tbsp. vinegar<br />* 2 cloves garlic, minced finely<br />* 1/2 tsp. salt<br />* 1 cup greek yogurt, strained<br />* 2 cucumbers, peeled, seeded and diced<br />* 1 tsp. chopped fresh dill<br />*Fresh squeezed lemon to taste!<br /><br />Preparation:<br /><br />Using your food processor chop the cucumbers until fine. Put in a strainer in your sink with some salt and let sit for 20 minutes. Strain the cucs until all excess liquid is removed.<br /><br />Combine olive oil, vinegar, garlic, salt, dill and lemon in a bowl. Mix until well combined. Using a whisk, blend the yogurt. Add the olive oil mixture to the yogurt mixture and mix well. Finally, add the cucumber and chopped fresh dill.
